Barbecued Liver And Bacon Recipe
Ingredients
1 lamb's liver
4-6 rashers bacon, derinded
Marinade:
1/3 cup olive oil
Juice of 1 lemon
Salt
Freshly ground pepper
1 tablespoon finely chopped parsley
Directions
Soak liver in water for 1 hour.
Remove skin and cut out tubes.
Cut into 1/2 inch slices, with knife in a slanting position.
Place liver in a shallow dish, pour over marinade, cover and stand for 1 hour.
Drain liver and barbecue over medium hot coals for approximately 10-12 minutes.
Grill bacon until crisp and brown.
Heat remaining marinade and serve with liver and bacon.
