Ingredients
Dried baby lima beans - 4 ½ cup
Salt pork or bacon - 1/2 lb, diced
Onions - 1 cup, chopped
Garlic - 1 1/4 tsp, minced
Mustard - 3 tbsp
Worcestershire sauce - 2 tsp
Salt - 1/2 tsp
Chili powder - 2 tsp
Brown sugar - 4 tsp
Vinegar - 1/4 cup
Directions
GETTING READY
1. Preheat the oven
2. Place beans in large heavy kettle; add 2 quarts water. Bring to a boil; cook for 2 minutes. Cover; let stand overnight.
MAKING
3. The next day bring to the boil again and reduce heat to simmer covered for 40 minutes
4. Drain beans, reserving 2 cups liquid.
5. Render salt pork in skillet. Sauté onions and garlic in pork fat; stir mixture into beans.
6. Add mustard, Worcestershire sauce, salt, chili powder, brown sugar and vinegar; stir in reserved liquid. Turn into greased baking dish. Bake at 350 degrees for 35 to 40 minutes.
