Barbecued Brisket Recipe
Ingredients
2 tablespoons coarsely ground pepper
2 teaspoons paprika
1 (5-pound) beef brisket
Directions
Sprinkle pepper and paprika on fat side of brisket only.
Soak oak, pecan, or mesquite chips in water 1 to 2 hours.
Prepare fire in grill, let burn until coals are white.
Rake coals to one end of grill; place wood chips over hot coals.
Place brisket, fat side up, at opposite end.
Cover and cook over indirect heat 3 1/2 to 4 hours or until tender.
To test for doneness, press thumb into side of brisket.
If meat feels spongy, it is done.
