Ingredients
8 pounds spareribs, cut into serving pieces
3 cups beer
1 cup honey
1 1/2 teaspoons dry mustard
2 teaspoons chili powder
2 teaspoons sage
1 tablespoon salt
2 tablespoons lemon juice
Directions
1. Place the ribs in a large shallow pan. Mix the remaining ingredients and pour over the ribs. Let stand in the refrigerator twenty-four hours, turning at least once.
2. Remove the ribs from the marinade. Reserve the liquid. Weave the spareribs on a spit or long skewers or place flat on the rack of a hot charcoal grill or broiler, about four inches from the heat. Cook, turning frequently and brushing with the marinade, until brown, about one hour and fifteen minutes, or bake in a preheated moderate oven (350° F.) about one and one-half hours, or till ribs are brown and glazed, basting frequently.
