Barbecued Spareribs Recipe

Ingredients
3 lbs (1.4 kg) spareribs
3 tbsp (45 ml) bacon fat or oil
1 garlic clove
3 onions, finely sliced
1 Cup (250 ml) ketchup
1/2 Cup (125 ml) cider vinegar
1 tsp (5 ml) curry powder
1 tsp (5 ml) paprika
1/4 tsp (1 ml) chili powder (optional)
3 tbsp (45 ml) brown sugar
1/2 tsp (2ml)salt
Pinch of pepper
1/2 tsp (2 ml) dry mustard
Directions
– Preheat oven to 400 °F (205 °C).
– Carve ribs into bite-size pieces.
– In a skillet, melt bacon fat or heat oil, cook garlic until golden, remove garlic and set aside. Saute spareribs.
– In an oven-proof dish, combine spareribs, garlic and onions.
– In a bowl, mix together all other ingredients and pour over spareribs, cover and bake for 1 hour or until meat is tender to taste.
