Barbecued Shrimp On A Skewer Recipe
Barbecued shrimp on a skewer is a ham wrapped shrimp recipe. Prepared with a tangy herbed wine and tomato marinade with basil and a hint of lemon juice for flavor, the shrimps are grill cooked with frequent marinade bastes and can be served as appetizer or sides in a meal.
Ingredients
1 envelope Onion or Onion-Mushroom Recipe Soup Mix
1 can (14 1/2 ounces) whole peeled tomatoes, undrained and chopped
1/2 cup vegetable or olive oil
1/4 cup dry white wine or vermouth
1/4 cup chopped fresh basil leaves
1 tablespoon lemon juice
1 teaspoon cracked peppercorns
2 pounds uncooked large shrimp, cleaned
4 thin slices cooked ham, cut into strips
1 tablespoon finely chopped parsley
How to make Barbecued Shrimp On A Skewer
In large bowl, combine onion recipe soup mix, tomatoes, oil, wine, basil, lemon juice and peppercorns.Add shrimp.
Cover and marinate in refrigerator, stirring occasionally, at least 2 hours.
Remove shrimp, reserving marinade.
On skewers, alternately thread shrimp with ham strips, weaving ham around shrimp.
Grill or broil, turning and basting frequently with reserved marinade, until shrimp are done.
Bring remaining marinade to a boil, then simmer 2 minutes; stir in pars ley.
