Barbecued Sausage Kabobs Recipe
Ingredients
1 pound Smoked Sausage, cut into 1-inch pieces
1 cup dried apricots
1 can (12 ounces) beer
1/2 red bell pepper, cut into 1 1/4-inch squares
1/2 green bell pepper, cut into 1 1/4-inch squares
1 Spanish onion, cut into wedges
1/4 pound fresh medium mushrooms
3/4 cup apricot preserves
2 tablespoons chili sauce
1 tablespoon prepared mustard
1 teaspoon Worcestershire sauce
Directions
Simmer sausage and apricots in beer in large saucepan over low heat 10 minutes.
Add peppers to sausage mixture; remove from heat.
Let stand 10 minutes, lb assemble kabobs, thread on skewers sausage, onion, red and green peppers, mushrooms and apricots.
Combine preserves, chili sauce, mustard and Worcestershire sauce in small saucepan.
Heat over medium heat, stirring until blended.
Brush kabobs with sauce.
Grill or broil, 4 inches from heat, 10 minutes, turning and brushing with more sauce after 5 minutes.
Brush with remaining sauce and serve.
