Barbecued Rump Steak Recipe

Ingredients
1 slice rump steak cut 2 1/2-inches thick
Freshly ground black pepper
Salt
Apricot or Tomato Barbecue Sauce (optional)
Directions
Rub surface of steak with freshly ground black pepper.
Place over glowing coals and sear quickly on either side to seal in the meat juices.
Lift off barbecue onto a piece of heavy foil (using tongs) and fold over foil, sealing it well on all sides.
Replace on barbecue and cook for 10 minutes on each side for medium rare steak, an extra 3 minutes on each side for medium steak.
Take care not to pierce foil when turning.
To serve, lift steak out of foil onto a wooden platter and carve in a slanting position, into 1-inch wide slices.
If desired, serve with one of the barbecue sauces.
