Barbecued Prawns Recipe
Ingredients
| 450 g/1 lb large prawns, cooked and unpeeled | ||
| 120 g/4 oz unsalted butter | ||
| 1 tsp each white, black and cayenne pepper | ||
| Salt | 1 Pinch | |
| 1 tsp each chopped fresh thyme, rosemary and marjoram | ||
| Garlic | 1 Clove (5gm), crushed | |
| Worcestershire sauce | 1 Teaspoon | |
| 140 ml/1/1/4 pint fish stock | ||
| 60 ml/4 tbsps dry white wine | ||
| Cooked rice, to serve | ||
Directions
1. Remove the eyes and the legs from the prawns.
2. Melt the butter in a large frying pan and add the white pepper, black pepper, cayenne pepper, salt, herbs and garlic. Add the prawns and toss over heat for a few minutes until heated through. Remove the prawns and set them aside and keep warm.
3. Add the Worcestershire sauce, stock and wine to the ingredients in the pan. Bring to the boil and cook for about 3 minutes to reduce. Add salt to taste.
4. Arrange the prawns on a bed of rice and pour over the sauce to serve.

3. Add the Worcestershire sauce, stock and wine to the ingredients in the pan. Bring to the boil and cook for about 3 minutes to reduce. Add salt to taste.
4. Arrange the prawns on a bed of rice and pour over the sauce to serve.
