Cook uncovered, 2 minutes, stirring once.
Cut luncheon meat into strips or cubes and add to pepper along with barbecue sauce, mixing to combine.
Cook covered, 4 minutes or until mixture is bubbly, stirring twice.
Spoon mixture onto toasted buns, topping with cheese slice and top half of bun.
Return to oven and cook uncovered, about 1 minute to melt cheese.
