Barbecued Duck Recipe
Ingredients
2 or 3 young ducks, quartered
1 cup sherry
1/3 cup honey or brown sugar
1 tablespoon soy
1 teaspoon grated fresh ginger (or powdered)
1 teaspoon dry mustard
Sesame seeds
Directions
Select lean, meaty young ducks.
Trim off all excess fat possible.
Pour marinade made of sherry, honey, soy, ginger, and mustard over the quartered duck and let stand several hours, or overnight, in refrigerator.
Place on grill over bed of coals and barbecue until done, about 10 to 15 minutes on each side, according to taste.
Baste duck with remaining marinade during cooking.
Sprinkle with sesame seeds before serving to 4 to 6 persons.
