Ingredients

 
1 chicken, 4 to 6 lbs (1.8 to 2.7 kg)
 
1/4 Cup (60 ml) butter
 
Salt and pepper
 
2 Cups (500 ml) commercial barbecue sauce
 
1 Cup (250 ml) water
 
2 tbsp (30 ml) oil
 
1 onion, grated
 
2 tbsp (30 ml) cornstarch
 
1 Cup (250 ml) ketchup
 
5 tbsp (75 ml) brown sugar
 
5 tbsp (75 ml) vinegar
 
Salt and pepper
 
1/2 tsp (2 ml) Worcestershire sauce

Directions

–  Preheat oven to 350 °F (175 °C).
–  Baste chicken with butter, season with salt and pepper and place in a covered casserole.
–  Add barbecue sauce. Add 1 cup (250 ml) of water and cover.
–  Cook approximately 1 1/2 hours, basting frequently.
–  In a large skillet, heat oil and saute onions. Add cornstarch and stir.
–  Add other ingredients and simmer for 10 minutes.
–  Pour sauce over chicken and serve.
