Barbecued Broiled Chicken Recipe
Ingredients
1 broiler-fryer cut up
1 can tomato juice
1 small onion, grated
2 tablespoons tarragon vinegar
1 tablespoon prepared mustard
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
Granulated or liquid low-calorie sweetener
Directions
1. Preheat broiler.
2. Place chicken, skin side down, in a single layer on rack in broiler pan.
3. Combine tomato juice, onion, vinegar, mustard, Worcestershire sauce, salt, pepper and your favorite low-calorie sweetener, using the equivalent of 1 tablespoon sugar, in a small bowl. Brush some over chicken.
4. Place broiler pan about 8 inches from heat. Broil, basting often with sauce, 20 minutes; turn skin side up. Continue broiling, basting often with sauce, 20 minutes longer, or until chicken is richly browned and tender.
