Barbecue Cornish Hens Recipe

Ingredients
| 4 frozen Rock Cornish game hens (12 oz. to 1 lb. each), thawed | ||
| Herb Butter | ||
| Lemon juice | 2 Tablespoon | |
| Apricot jam | 1/4 Cup (16 tbs), strained | |
| Watercress sprigs and fresh apricot halves, for garnish | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Wash Cornish hens; pat dry, inside and out, with paper towels.
Sprinkle skin and cavities lightly with salt and pepper.
Place about 1 tablespoon of the herb butter in large cavity of each; fasten cavities closed with wooden picks or small metal skewers.
Tie legs together.
Melt remaining herb butter with lemon juice.
Place hens, breasts up, on a double thickness of heavy foil; turn up a 1-inch rim on all 4 sides to form a shallow pan.
Place on grill over glowing coals.
Cover and barbecue, adjust drafts to keep fire burning slowly, and cook, basting occasionally with herb butter, for 45 minutes to 1 hour or until tender and golden brown.
If you wish to cook the birds in the oven, roast in 350° oven for about 1 hour.
