Barbados Black Bean Salsa Recipe
Ingredients
| Black beans | 1/2 Cup (16 tbs), washed | |
| Salt | 1/3 Teaspoon | |
| Mangoes | 1 Cup (16 tbs), diced | |
| 3 tablespoons seeded and finely diced red bell pepper | ||
| 1 tablespoon Coyote Cocina Howlin' Hot Sauce or other Scotch bonnet chile sauce | ||
| Lime juice | 1 Tablespoon | |
Directions
Cook the beans for 1 to 1 1/2 hours, or until tender, adding 1/2 tea-spoon salt towards the end.
Drain the beans and let cool.
Transfer to a mixing bowl, add the remaining ingredients, and fold together.
