Banana Spicecake Recipe

Ingredients
2 3/4 c. sifted flour 675 mL
2 tsp. baking powder 10 mL
1 tsp. baking soda 5 mL
1 tsp. salt 5 mL
1/4 tsp. ground cloves 1 mL
3/4 tsp. nutmeg 4 mL
1 1/2 tsp. cinnamon 10 mL
1 1/3 c. sugar 325 mL
2/3 c. shortening 150 mL
2 eggs, well beaten
1 2/3 c. mashed bananas 400 mL
2 tsp. vanilla 10 mL
Chocolate or spice frosting
Directions
Preheat the oven to 350°F (180° C).
Sift the first 7 ingredients together and set aside.
In a large bowl, cream together the sugar and shortening until fluffy.
Beat in the eggs, one by one; add the dry ingredients and the mashed bananas.
Mix well and stir in the vanilla.
Pour into two 9" (23 cm) layer cake pans which have been greased and floured or sprayed.
Bake for approximately 35-40 minutes and cool, in the pan, for approximately 5 minutes.
Turn out onto a rack and cool completely before icing with chocolate fudge icing.
