Banana-Rum Parfait Recipe

Ingredients
1 package (4-serving size) JELL-O® Brand Lemon, Orange or Strawberry Flavor Gelatin
1 cup boiling water
1/4 cup cold water
Ice cubes
1 medium banana, sliced
1 cup (1/2 pint) vanilla ice cream
1 tablespoon light rum or
1/4 teaspoon rum extract
Directions
Completely dissolve gelatin in boiling water.
Measure cup of the gelatin.
Combine cold water and ice cubes to make 3/4 cup.
Add to measured gelatin, stirring until slightly thickened.
Remove any unmelted ice.
Stir in banana and spoon into individual parfait glasses.
Blend ice cream and rum into remaining gelatin.
Spoon over fruited gelatin in glasses.
Chill until set, about 30 minutes.
Garnish as desired.
