Banana Pudding Recipe

Ingredients
4 bananas
1 1/2 cups coconut milk
4 tablespoons sugar
2 tablespoons cornstarch
1/2 cup water
1 teaspoon vanilla extract
2 drops red food coloring
Directions
Peel the bananas and cut in 2-inch lengths.
Cook in the coconut milk until very soft.
Add sugar and mash smooth.
Mix the cornstarch and water; stir into the banana mixture.
Cook over low heat, mixing steadily until thickened.
Add the vanilla and coloring.
Pour into 6-8 sherbet glasses or a mold.
Chill.
Serve with whipped cream or coconut cream.
