Banana Oat Bran Muffins Recipe
Banana oat bran muffins are the perfect for you when you feel like a heavy snack. Made with ripe mashed bananas and buttermilk, these muffins are filling and delicious. The brown sugar gives this recipe a special sweetness that is enhanced by the raisins inside.
Ingredients
1 1/4 cups all-purpose flour 300 mL
3/4 cup oat bran 175 mL
1 tsp baking powder 5mL
1 tsp baking soda 5mL
1/4 tsp salt lmL
1 egg
1/3 cup vegetable oil 75 mL
1/3 cup lightly packed brown sugar 75 mL
1 cup mashed banana 250 mL
1/2 cup buttermilk or sour milk 125 mL
2 tbsp molasses 25 mL
3/4 cup raisins 175 mL
Directions
In a large bowl, combine flour, oat bran, baking powder, baking soda and salt.
In another bowl, whisk together egg, oil, brown sugar, banana, buttermilk, molasses and raisins.
Add to dry ingredients, stirring just until blended and lumpy.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 to 25 minutes.
