Banana Nut Cuffins Recipe

These banana nut muffins are made with freshly mashed bananas and nuts. A favorite muffin recipe of mine, these liitle snacks just need an excuse to be baked. Innovatively called banana nut cuffins, these muffins also smell heveanly when they bake.

Ingredients

 
2 cups all-purpose flour 500 mL
 
1 2/3 cups granulated sugar 400 mL
 
11/4 tsp baking powder 6mL
 
11/4 tsp baking soda 6mL
 
1 tsp salt 5mL
 
2/3 cup shortening 150 mL
 
2/3 cup buttermilk 150 mL
 
3 eggs
 
11/4 cups mashed bananas 300 mL
 
1/2 cup chopped walnuts orpecans 125 mL
 
Icing sugar

Directions

In a large bowl, combine flour, sugar, baking powder, baking soda, salt, shortening, buttermilk, eggs, bananas and walnuts.
Mix at low speed, scraping sides, then beat on high speed for 3 minutes.
Spoon batter into prepared muffin tins, filling cups three-quarters full.
Bake in preheated oven for 20 to 25 minutes.
When cuffins cool, dust with icing sugar.
HINT: To separate eggs use a small funnel, cracking egg open over the funnel.
The white will run through while the yolk will remain in the funnel.
