Banana Nut Bread Recipe

| Vanilla extract | 1 Teaspoon | |
| Vegetable cooking | 1⁄3 Cup (5.33 tbs), chopped (walnuts) |

Directions
Combine sugar and oil in med.bowl; beat with electric mixer at med.speed 1 minute or until well blended.
Add egg whites; beat just until blended, about 20 seconds.
With mixer running at low speed, add reserved flour mixture alternately with bananas and vanilla, beginning and ending with flour mixture.
Blend well after each addition.
Fold in walnuts.
Pour batter into an 8x4 inch loaf pan coated with cooking spray.
Bake at 350 degrees F 50 - 60 minutes or until wooden toothpick inserted in center comes out clean.
Cool in pan 5-10 minutes; remove from pan.
Cool completely on a wire rack.
