Banana Jam Bread Recipe

1/2 cup shortening
1 cup sugar
2 eggs
1 cup mashed ripe banana

1/2 cup strawberry jam

Directions
Cream the shortening; gradually add sugar, beating until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Combine banana and lemon juice; stir into creamed mixture.
Combine flour, baking powder, and salt; add to creamed mixture, stirring just until moist.
Stir in jam and pecans.
Spoon batter into 2 greased and floured 8 1/2- x 4 1/2- x 3-inch loaf pans.
Bake at 350° for 50 minutes or until wooden pick inserted in center comes out clean.
Cool in pans 10 minutes; remove from pans, and cool completely on wire racks.
