Ingredients

 Shortening1/3 Cup (16 tbs)
 Sugar2/3 Cup (16 tbs)
 2 eggs, slightly beaten
 Flour1 3/4 Cup (16 tbs), sifted
 Baking powder2 3/4 Teaspoon
 Salt1/2 Teaspoon
 Ripe bananas1 Cup (16 tbs), mashed
 1/2 cup coarsely chopped nuts
 Raisins1/4 Cup (16 tbs)
 Candied fruits1 Cup (16 tbs)

Directions

GETTING READY
1. Preheat the oven to 350 degrees

MAKING
2. In a large bowl, cream the shortening while adding the gradually. Beat until light and sugar is dissolved
3. Add eggs; beat until thick and lemon-colored
4. Sift flour, baking powder and salt together; add to egg mixture.
5. Fold in bananas and then add the nuts, raisins and fruits to beat well
6. Place shallow pan of water in bottom of oven and then spoon batter into greased loaf pan. Bake at for 1 hour and 10 minutes or until bread is baked. Remove from the oven and set aside to cool on a wire rack to cool.

SERVING
7. Frost with white icing and serve immediately
