Banana Fan Recipe

The banana fan is a composed and cooked dessert prepared with cherries and bananas served with whipped cream and fruit puree. I make this banana fan often as a dessert for kids. It is relatively healthier and quite refreshing. Served chilled the banana fan is a lovely dessert.

Peel bananas and halve them lengthwise.
Arrange halves flat side down in the shape of an open fan on a round silver or glass dish.
Boil water and sugar together at a rolling boil 4 minutes.
Add cherries, reduce heat, and simmer 2 minutes.
Remove some of the cherries with a perforated spoon and arrange in a design on upper portion of fan.
Put the remaining fruit with syrup into an electric blender along with flamed rum; process until pureed.
Or force mixture through a food mill.
Spoon over upper part of fan.
