Banana Crumble Muffins Recipe

banana crumble muffins are made with ripe chopped bananas and runchy cereal to give you a crumbly muffin with a fresh taste. the brown sugar sweetens up this chewy muffin just the right amount.

Ingredients

 
1/2 cup Banana Nut Crunch cereal 125 mL
 
1 tbsp packed brown sugar 15 mL
 
1 tsp cinnamon 5mL
 
1 tsp vegetable oil 5mL
 
1 1/4 cups all-purpose flour 300 mL
 
1 tbsp baking powder 15 mL
 
1/8 tsp salt 0.5 mL
 
1 egg
 
1/2 cup milk 125 mL
 
1/3 cup firmly packed brown sugar 75 mL
 
3 tbsp vegetable oil 45 mL
 
11/2 cups Banana Nut Crunch cereal 375 mL
 
1 cup finely chopped bananas 250 mL

Directions

In a bowl mix together cereal, brown sugar and cinnamon.
Drizzle with oil and mix until topping is crumbly.
Set aside.
In a large bowl, combine flour, baking powder and salt.
Make a well in the center.
In another bowl, whisk egg.
Add milk, brown sugar and oil, blending well.
Pour into flour mixture and stir just until moistened and blended.
Do not overmix.
Fold in cereal and bananas.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Sprinkle with topping.
Bake in preheated oven for 15 to 20 minutes or until lightly browned.
HINT: Ripen green bananas by wrapping in a wet dish towel and placing in a paper bag.
