Banana Cream Pie Recipe

Ingredients
2 cups milk
3 tablespoons whole wheat flour
2 tablespoons rye flour
1/2 cup sugar
1/4 teaspoon salt
3 egg yolks
1 teaspoon vanilla
1 tablespoon butter
2 firm, ripe bananas
1 9-inch baked pie shell
MERINGUE:
3 egg whites
1/4 teaspoon cream of tartar
6 tablespoons powdered sugar
1/2 teaspoon vanilla
Directions
Scald the milk in a medium saucepan.
Mix dry ingredients together in a small bowl, and add to the hot milk.
Stir until thick and smooth.
Beat egg yolks in a separate bowl.
To temper eggs, spoon 2 to 3 tablespoons of the hot pudding into the eggs, and stir.
Add eggs to the pudding.
After mixture thickens, add vanilla and butter.
Allow filling to cool.
Slice bananas into baked pie shell, and pour filling over top.
To prepare meringue, whip egg whites and cream of tartar until stiff.
Add sugar and vanilla.
Continue whipping until stiff peaks form.
Spoon over pie filling, sealing meringue to the edge of the pie crust.
Bake in a 325° F. oven for 10 to 15 minutes or until meringue is golden brown.
