Ingredients
2 cups biscuit mix
2 tbsp. sugar
1/2 tsp. mace
1 egg
3/4 cup milk
3 firm bananas
Melted butter
2 tbsp. sugar
2 tsp. grated orange rind
Orange Hard Sauce
Directions
Heat oven to 350 degrees.
Grease an 8-inch square cake pan.
Combine biscuit mix, 2 tbsp. sugar and mace lightly with fork.
Beat egg and milk together with a fork and add to biscuit mix, stirring briskly until well blended.
Pour into prepared pan and spread evenly.
Peel and slice bananas into 1/2-inch diagonal slices.
Lay close togetheron top of batter.
Brush bananas with melted butter.
Combine 2 tbsp. sugar and grated orange rind and sprinkle over pudding.
Bake about 40 minutes or until a toothpick inserted in centre comes out clean.
