Banana Coconut Betty Recipe
Banana Coconut Betty is an anytime dessert and goes well with all types of menu. The dish is packed with the flavors of butter, orange peel, banana, coconut and orange juice. Why don’t you give the Banana Coconut Betty a try this weekend?
Ingredients
2 cups soft bread crumbs (2 1/2 slices bread)
6 tablespoons butter or margarine, melted
1/3 cup sugar
2 teaspoons grated orange peel
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
4 cups sliced banana (4 or 5)
1/4 cup orange juice
1/4 cup water
1/2 cup flaked coconut
Directions
Preheat oven to 375°.
Toss crumbs with melted butter or margarine to coat.
Line a 1 1/2 quart casserole with one third of the crumb mixture.
Combine sugar, orange peel, nutmeg, and cinnamon.
Cover crumbs with half the sliced banana and half the sugar mixture.
Cover with another one third of the crumbs, the remaining banana, and remaining sugar mixture.
Combine orange juice and water; spoon over.
Toss the remaining crumbs with flaked coconut; sprinkle over all.
Bake, covered, at 375° for 30 to 35 minutes.
Uncover; bake till golden, 5 to 10 minutes more.
