Banana Bran Cookies Recipe
Ingredients
| All purpose flour | 3/4 Cup (16 tbs) | |
| Baking powder | 1/2 Teaspoon | |
| Baking soda | 1/4 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| Ground allspice | 1/8 Teaspoon | |
| Ground cloves | 1/8 Teaspoon | |
| 1 cup bran flakes | ||
| Banana | 1/2 Cup (16 tbs), mashed | |
| Butter | 1/3 Cup (16 tbs) | |
| Sugar | 1/2 Cup (16 tbs) | |
| Egg | 1 | |
| Pecans | 1/4 Cup (16 tbs), coarsely chopped | |
Directions
Sift flour, baking powder, baking soda, salt, and spices together; set aside.
Combine bran flakes and the banana; set aside.
Cream butter; add sugar gradually, beating until fluffy.
Add egg and beat thoroughly.
Add dry ingredients to creamed mixture alternately with the banana mixture, mixing until blended after each addition.
Stir in pecans.
Drop by slightly rounded teaspoonfuls onto greased cookie sheets.
Bake at 375°F 10 to 12 minutes.
