Ingredients
1 cup sugar
1/2 cup hydrogenated shortening
2 eggs
1/2 teaspoon salt
Skin of 1/2 tangerine or peeled outer rind of 1 small orange
2 bananas, each broken into 8 pieces
1/2 cup walnuts
2 cups sifted all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
Directions
Insert metal blade in processor bowl.
Add sugar, shortening, eggs, salt, and rind.
Process until light and the find is finely chopped, about 15 seconds.
Add bananas; process 4 or 5 seconds.
Scrape down sides and break up any remaining large pieces.
Add walnuts, process 1 second.
Stir together the flour, baking powder, and soda.
Add to the bowl and process by turning on and off quickly 4 or 5 times or just until blended.
Do not overprocess.
Pour into a greased 9 X 5 inch loaf pan, and bake at 350°F for 55 to 60 minutes.
Cool on a rack and serve warm.
Top with a little whipped cream or cream cheese if you are not too concerned with calories.
