Banana Walnut Loaf Recipe
Ingredients
| 150 g/5 oz sugar | ||
| 40 g/1 1/2 oz butter or margarine | ||
| Eggs | 3 | |
| Bananas | 4 , mashed | |
| 250 g/8 oz flour | ||
| Baking powder | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Soda bicarbonate | 1/4 Teaspoon | |
| 175 g/6 oz walnuts, chopped | ||
Directions
Cream together the sugar, butter for margarine and eggs.
Beat until the mixture is light, then beat in the bananas.
Sift the flour, baking powder, salt and soda into the bowl and mix well.
Fold in the walnuts.
Pour the batter into a greased 500 g/1 lb loaf tin.
Bake in a moderate oven (180°C/350°F or Gas Mark 4) for 1 hour, or until a skewer inserted into the centre of the loaf comes out clean.
Turn out of the tin onto a wire rack and cool before serving.
Makes one 500 g/1 lb loaf.
