Banana Tapioca Cream Recipe
Ingredients
| Quick-cooking tapioca | 2 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Sugar | 1/3 Cup (16 tbs) | |
| Milk | 2 Cup (16 tbs), scalded | |
| Egg | 1 , separated | |
| Orange rind | 1 Teaspoon, grated | |
| Ripe bananas | 1 Cup (16 tbs), sliced |
Directions
Mix tapioca, salt and half the sugar together.
Add milk and cook over boiling water about 5 minutes, or until tapioca is clear, stirring frequently.
Combine egg yolk and remaining sugar.
Add a small amount of the tapioca mixture, stirring constantly.
Then pour back into remaining hot mixture, beating vigorously.
Continue cooking about 5 minutes, stirring constantly.
Fold in beaten egg white.
Cool.
Add orange rind and bananas.
Chill.
Garnish with sliced ripe bananas.
