Banana Sweetened Granola Recipe
Ingredients
| Cracked wheat | 1/2 Cup (16 tbs) | |
| Boiling water | 1 Cup (16 tbs) | |
| Ripe banana | 1 Cup (16 tbs), mashed | |
| 1/2 cup nonfat milk | ||
| Salad oil | 1/4 Cup (16 tbs) | |
| Vanilla | 1 Tablespoon | |
| 4 cups regular rolled oats | ||
| 1 1/2 cups bran cereal | ||
| 1 cup each sweetened flaked dry coconut and blanched almonds | ||
| 1/2 cup each toasted wheat germ and sunflower seed | ||
| Sesame seed | 1/4 Cup (16 tbs) | |
Directions
In a small bowl, mix together bulgur and boiling water; set aside until most of the liquid is absorbed, about 1 hour.
In a large bowl, beat banana with milk, oil, and vanilla until well mixed.
Add oats, bran cereal, coconut, almonds, wheat germ, sunflower seed, sesame seed, and bulgur with liquid.
Evenly divide cereal mixture between 2 baking pans, each 10 by 15 inches; spread in an even layer.
Bake in a 300° oven until mixture is crisp and golden, about 1 1/2 hours; stir every 20 minutes.
Let cool.
