Banana Spice Cake Recipe

Ingredients
2 3/4 cup sifted all-purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1/4 tsp cloves
2/3 cup solid shortening
1 cup granulated sugar
2 tsp water
1 tsp vinegar
2 eggs, beaten
1 1/2 cup mashed bananas
2 tsp vanilla extract
Directions
Sift flour, baking powder, baking soda, salt, and spices together three times.
Set aside.
Beat shortening, sugar replacement, water, and vinegar together until fluffy.
Add eggs and beat well.
Add sifted ingredients and mashed bananas alternately in small amounts to creamed mixture, beating well after each addition.
Stir in vanilla.
Transfer to greased and floured 13 x 9 in. (33 x 23 cm) cake pan.
Bake at 350°F (175°C) for 35 to 45 minutes or until toothpick inserted in center comes out clean.
