Ingredients

 3 firm ripe bananas
 Lemon juice1 1/2 Tablespoon
 Sugar1/3 Cup (16 tbs)
 Cornstarch1 Tablespoon
 Salt1/8 Teaspoon
 1/2 teaspoon powdered mace
 1/4 teaspoon grated lemon rind
 Milk3/4 Cup (16 tbs)
 Eggs3 Large, separated
 Butter/Margarine2 Tablespoon
 Vanilla extract1 1/2 Teaspoon
 Whipped cream, sweetened to taste

Directions

GETTING READY
1) Skin and slice bananas.
2) Preheat moderate oven (350° F.)

MAKING
3) Dip bananas into lemon juice.
4) In a saucepan mix with sugar, cornstarch, salt, mace, and lemon rind.
5) Pour milk into it and blend.
6) Cook and still over medium heat till thick.
7) Add some hot mixture to beaten egg yolks.
8) Transfer it on the remaining hot mixture.
9) Add butter and sliced bananas.
10) Beat egg whites until they form soft stiff peaks.
11) Add egg to the custard mixture along with vanilla.
12) Transfer to 1 1/2 -quart souffle dish.
13) Place the bowl in a pan of hot water.
14) Bake in oven (350° F.) for 1 hour.

SERVING
15) This dessert can be served with whipped cream.
