Banana Pudding Recipe

Ingredients
1 tbsp cornstarch
2 cups milk
1/2 cup grated coconut
2 bananas, sliced
3 egg yolks
1/2 cup sugar
1 tsp vanilla extract
2 tbsp orange peel
1 basic recipe meringue
Directions
Preheat oven to 450 °F (230 °C).
In a bowl, dilute cornstarch in a little milk.
Set aside.
In a small saucepan, warm remaining milk.
Add diluted cornstarch.
Let mixture thicken.
Add grated coconut and sliced bananas.
Cook 1 minute.
Set aside.
In a bowl, beat egg yolks, sugar, vanilla extract and orange peel.
Fold into hot mixture.
Pear into a square dish.
Top with meringue.
Bake in oven 3 minutes or until meringue is golden brown.
