Ingredients

 Butter and flour for lining pan
 Butter for cake 1/2cup
 Brown sugar1/2 Cup (16 tbs)
 White sugar1/2 Cup (16 tbs)
 Egg2
 All-purpose flour sifted before measuring 2 cups
 Baking soda1 Teaspoon
 Salt1/2 Teaspoon
 Bananas1 Cup (16 tbs), mashed
 Grated lemon rind 1/4 teaspoon
 Chopped mixed nut meats 1/2 cup

Directions

1. Grease and flour a 9 x 5 x 3 inch loaf pan.
2. Heat oven to 32S°F.
3. Beat butter, brown sugar and white sugar until blended smoothly.
4. Beat in eggs, one at a time.
5. Separately, sift flour, soda and salt together. Add to the beaten mixture in small portions, blending each in thoroughly.
6. Blend in bananas, lemon rind and nuts.
7. Turn mixture into prepared pan. Bake for about 1 hour.
8. Cool for 12 to 24 hours before cutting.
