Banana Nut Bread Recipe

Ingredients
2 cups flour, sifted
3/4 cup sugar
3 tsp. baking powder
1 tsp. salt
1/2 tsp. soda
1/2 tsp. cinnamon
1 cup chopped Hawaiian macadamia nuts (or almonds, walnuts)
1 egg, beaten
1 cup mashed bananas
2 tbs. shortening, melted
Directions
Sift all dry ingredients together.
In separate bowl, beat egg, stir in bananas and shortening.
Stir into dry ingredients, just enough to blend, add nuts.
Pour into greased loaf pan (8 x 4 x 4-inches), and bake in a moderate oven 350°F.for 1 hour.
Cool on rack.
