 Granulated Sugar1/2 Cup (16 tbs)
 Brown sugar2 Tablespoon
 Butter margarine5 Tablespoon, softened
 1 egg plus 2 egg whites
 Ripe bananas1 1/3 Cup (16 tbs), mashed
 All purpose flour2 1/2 Cup (16 tbs), sifted
 Baking soda1 Teaspoon
 Salt1/2 Teaspoon
 Walnuts1/3 Cup (16 tbs), chopped

Directions

Preheat oven to 375°F.
Spray 9x5-inch loaf pan with nonstick cooking spray.
Beat sugars and margarine in large bowl with electric mixer until creamy.
Add egg, egg whites and bananas.
Sift together flour, baking soda and salt in separate bowl; stir into banana mixture just until dry ingredients are moistened.
Fold in walnuts.
Pour into prepared pan.
Bake 1 hour.
Cool in pan 10 minutes.
Remove to wire rack; cool completely.
