 Instant coffee granules1 Teaspoon
 Bananas1 Cup (16 tbs), mashed
 All purpose flour1 1/4 Cup (16 tbs)
 Sugar2/3 Cup (16 tbs)
 Cornstarch1/4 Cup (16 tbs)
 Cocoa3 Tablespoon
 Baking soda1 Teaspoon
 Salt1/2 Teaspoon
 1 egg, lightly beaten
 Vegetable oil1/3 Cup (16 tbs)
 Vinegar1 Tablespoon
 Vanilla1 Teaspoon
 Silky Mocha Frosting

Directions

Preheat oven to 350° F.
In a small bowl, stir coffee into mashed bananas; blend well.
In a 9-inch square baking pan, combine flour, sugar, cornstarch, cocoa, soda, and salt.
Stir thoroughly with a fork.
Make a well in the center of the dry ingredients.
Place banana mixture, egg, oil, vinegar, and vanilla in the well.
With a fork, stir dry ingredients into moist ingredients until well blended.
Bake for 30 minutes.
Cool completely before frosting with Silky Mocha Frosting.
