Banana Litchi Souffle Recipe

2 tbsp butter
 
2 tbsp cornstarch
 
Pinch of salt
 
1 cup bananas, mashed
 
1/3 cup litchis, chopped
 
1/2 oz dark rum
 
1 tbsp lime juice
 
1 tsp lime peel, grated
 
3 egg yolks
 
1/2 cup sugar
 
5 egg whites

Directions

Preheat oven to 350 °F (175 °C).
Butter and sugar 4 ramekins or a souffle dish.
In a saucepan, melt butter with cornstarch and salt.
Add mashed bananas and litchis.
Over low heat, while stirring, cook 3 minutes or until mixture thickens.
Add rum, lime juice and peel.
Remove from heat.
Set aside.
In a bowl, beat egg yolks and sugar.
Fold in fruit mixture.
Set aside.
In a second bowl, beat egg whites until soft peaks form.
With a spatula, gently fold into first mixture.
Pour into souffle dish.
Bake in oven around 35 minutes (or 25 minutes for ramekins).
