Banana Layer Cake Recipe
Ingredients
1 egg and
1 egg yolk, beaten until very light
2 cups sifted cake flour
1 teaspoon baking powder
1 teaspoon soda
1/2 teaspoon salt
1/2 cup shortening
1 1/2 cups fine white sugar
1 egg and 1 egg yolk not beaten
1 cup mashed bananas (mash just before adding)
1/2 cup sour milk or buttermilk
1 teaspoon vanilla
Directions
Cream shortening, add sugar and blend thoroughly.
Add all of the eggs, then the mashed bananas.
Add flour sifted with the baking powder, soda and salt, alternately with the sour milk, and lastly the vanilla.
Bake in two greased layer pans 8"x8", in moderate oven (350° F.) for 25 minutes.
Fill and ice with pineapple or orange butter icing.
