2 tsp (10 ml) Caribbean Oil
4 tsp (20 ml) molasses
1/4 tsp (1 ml) ground ginger
1 1/2 tsp (8 ml) salt
1 cup (240 ml) long-grain white or brown rice
1 ripe banana, diced
1/2 cup (120 ml) chopped and pitted dates or raisins
Directions
In a heavy bottomed, 2-3-quart saucepan bring water, oil, molasses, ginger and salt to a boil.
Add rice and stir well.
Simmer covered for 15 minutes.
Simmer for 5 more minutes with the lid slightly open.
Gently fold the banana and the dates into the rice.
Allow to stand, covered, for 10 minutes.
