Banana Date Muffins Recipe
Ingredients
| All purpose flour - 2 cups + 1 tbsp | ||
| Double acting baking powder - 2 tbsp | ||
| Cinnamon | 3/4 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Low cal margarine - 1/2 cup | ||
| Granulated Sugar | 1/2 Cup (16 tbs) | |
| Egg | 1 | |
| Vanilla extract | 1 Teaspoon | |
| Bananas | 3 | |
| Wheat bran flake cereal - 3/4 oz | ||
| Pitted dates | 12 | |
Directions
GETTING READY
1. Preheat oven to 400°F
2. Spray a coat of cooking spray on twelve 2.5" diameter muffin-pan cups
MAKING
3. On a sheet of wax paper, sift together the flour, baking powder, cinnamon and salt and set it aside
4. In a medium bowl, mix together the sugar, margarine, egg and vanilla nad beat till fluffy with an electric mixer
5. Stir bananas into adn add flour mixture; beat till well blended and stir in cereal and dates
6. Fill the muffins with equal amounts of the mixture and bake for twenty five minutes; remove and place on a wire rack to cool

7. Serve as appropriate
