Banana Cake Recipe
A good way to win some compliments from friends and family is to prepare banana cake using this recipe. This banana cake makes a good dessert for most meals. Banana cake gets its taste from fruits. It is ideal for those who follow diabetic diet. With easily procurable ingredients this banana cake recipe is a must try.
Ingredients
2 cup flour
1 tsp baking powder
2 tsp fructose
1/4 cup fat-free mayonnaise
1/2c. egg substitute
l 1/2 cup mashed banana
1/2 tsp vanilla extract
1 tsp banana extract
3 egg whites
1/4 tsp cream of tartar
Directions
Sift together the flour, baking powder, and fructose.
In a bowl, mix the mayonnaise, egg substitute, banana, and flavorings.
Beat until smooth.
Gradually add the flour mixture and beat to combine.
In a separate bowl, beat the egg whites until foamy.
Add cream of tartar and beat until stiff.
Add approximately a third of the whites to the flour mixture to lighten it.
Gently fold in the rest.
Pour into two 8 in. (20 cm) cake pans that have been coated with nonstick cooking spray.
Bake in a 350°F (180°C) oven for 20 minutes.
Frost with Applesauce-Carrot Cake Frosting, Creamy Frosting, or your favorite whipped topping and sliced ripe bananas.
