 Ripe bananas400 Gram, skinned
 250 gms. self-raising flour
 Butter130 Gram
 Brown sugar130 Gram
 Eggs3
 Honey3 Tablespoon
 Orange rind2 Tablespoon, grated
 1 tsp. nutmeg-cardamom powder
 Salt1 Pinch

Directions

• Mash the bananas in a glass bowl.
• Place the flour, butter and salt in another bowl and rub together with your fingers till it resembles breadcrumbs.
• Stir in the brown sugar, beaten eggs and honey with the mashed bananas. Also stir in the orange rind and nutmeg-cardamom powder.
• Place the mixture in a rectangular 1 kg. loaf tin and bake in a preheated oven at 180°C. It will take about 1 1/4 hours. When ready, cool a little (5 mins.), remove on a wire rack and cool
