Banana and Chocolate fudge cake Recipe
A rich, chocolate and banana fudge cake - delicious.
Ingredients
| 4 very ripe bananas. | ||
| Eggs | 3 Small | |
| Cocoa powder | 100 Gram | |
| 150g castor sugar | ||
| Rice flour | 150 Gram | |
| Splash of vanilla | ||
| 100g chocolare chips | ||
| 100g of dried cranberries / sultanas / currents / chopped dates - whatever you fancy. | ||
Directions
Preheat oven to 200 c
Mash bananas and beat the eggs - use a food processor if you have one.
Add all the other ingrediants except choc chips and blend together until you have a very smooth batter. Stir in choc chips and fruit.
Pour into a greased, lined cake tin.
Spoon into cake tin. Put in oven and turn oven down to 130 c. Cook for 3/4 hour then check with a skewer. Cake should be sticky but firm. Allow to cool down before turning out of tin.
