Banana Ambrosia Recipe
This recipe of banana ambrosia was picked up by me from a gourmet magazine, I twisted it a little bit to meet my taste here I am, sharing my version with you. Use the freshest of fruits available to get the most amazing banana ambrosia. The greek banana ambrosia has a way of addicting you to it on the first bite. Surely, banana ambrosia is a recipe one can try out any time.
Ingredients
3 tablespoons butter or margarine
6 large ripe bananas, peeled and quartered lengthwise
The juice of 1 orange
1 orange, peeled, pitted and diced
3 tablespoons brown sugar, firmly packed
14 cup shredded coconut
Directions
1 Melt butter in a shallow non-metallic baking dish in Microwave Oven 30 (40) seconds.
2. Place bananas in baking dish and coat well with butter.
3. In a small bowl combine the orange juice and pieces and brown sugar until well blended. Spoon over bananas.
4. Heat, uncovered, in Microwave Oven 4 (5) minutes or until bananas are soft and glazed.
5. Just before serving, sprinkle with coconut.
