Bamboo shoot curry Recipe
Ingredients
1). 1 can bamboo shoots (Drain & chop into small pieces)
2). 1 onion (Finely chopped)
3). Salt to taste
4). 4 dry red chillies
5). 1/4 tsp mustard seeds
6). 3 tbsp oil
Directions
1. Apply salt to bamboo shoots and keep it aside for about 30 minutes. Squeeze out the water.
2. Heat oil in a pan and add mustard seeds.
3. When they splutter add cut red chillies and fry for few seconds.
4. Add onion and fry till golden brown.
5. Add bamboo shoots and mix it well. Cover and cook on a low flame for about 10 minutes stirring casually.
6. Serve hot as a side dish with plain rice and curry.

Bamboo Shoot is Good for controlling High BP. 1 Cup of bamboo shoot contains 600 ml of Pottassium. Pottassium is good for Heart. Bamboo shoot nutralize the bad fat.

If you can find the bamboo packaged in vacumn pack plastic or in tubes fresh at the Asian markets or even in glass jars-give them a try-so much better-no tinney taste! We love bamboo shoots, actually all types of bamboo.
