Ingredients
1 cup bamboo shoots
1 1/2 cup chicken stock chicken breast
1 cup sliced mushrooms
5 eggs
2 spring onions, chopped
1 tbsp. cornflour
1/2 cup chopped cooked meat
1 tsp. salt
2 sprigs parsley, chopped fine
4 tbsps. peanut oil
Directions
Slice the bamboo shoots into thin strips.
Again cut the slices into very thin strips - they should be half the thickness of matchsticks.
Place bamboo shoots and 1 cup chicken stock in a pan and simmer for 25 minutes.
Drain well.
Mince the chicken breast and keep aside.
Beat the eggs well in a bowl.
Add cornflour and salt.
Beat again to an even consistency.
Add chicken, meat, mushroom and bamboo shoots.
Heat oil, saute chopped onions for 2 minutes.
Pour in egg mixture, stir well and cook 5-6 minutes, add ¥2 cup chicken stock.
Cook another 5 minutes.
Remove and serve hot with chopped parsley.
